Salsa: Pineapple Salsa Ole

2 cups cubed fresh pineapple
1/3 cup finely diced white onion
2 Tbsp. fresh lime juice
2 fresh jalapeno peppers, seeded and minced
1/2 small red bell pepper, diced
1 Tbsp. Splenda or Brown Sugar Twin
1 Tbsp. fresh lemon juice
2 teaspoons rice wine or white wine vinegar
1 Tablespoon fresh cilantro, chopped
Recipe
Combine all ingredients in a medium non-reactive saucepan. Simmer over low heat about 20 minutes. Serve warm with grilled meat, poultry or fish.
Yield: 2 cups
