Sauce: Blackberry Sage Sauce

List of Ingredients
* 1/4 cup chopped shallots
* 2 cups red wine
* 3 cups low sodium chicken stock
* 1 3/4 cups of fresh or frozen blackberries
* 1/4 cup fresh chopped sage or 1 1/2 tbsp dried
* sweetener, to taste
* pepper, to taste
Recipe
Heat saucepan. Add shallots and a little water or broth. Saute until very lightly browned. Add wine, increase heat to high, and boil until reduced by half. Add stock, blackberries, and sage. Continue to boil until the sauce reaches a light saucelike consistency. Add sweetener and pepper to taste. Strain through a fine-mesh sieve, pressing the solids to extract all the liquid. Serve warm with beef, venison, or other game
