Sauce: French Tofu Hollandaise Sauce

List of Ingredients
5 ounces soft, silken tofu, drained
2 tablespoons lemon or lime juice
1 teaspoon grated lemon rind, optional
(original recipe called for 1/4 teaspoon salt)
1/8 teaspoon garlic powder
1/3 cup hot, vegetable stock
3 tablespoons minced parsley
Recipe
Place all ingredients except for the stock and parsley in a food processor or blender. Puree until very smooth, scraping the sides of the bowl as necessary. While the motor is running, gradually pour in the stock and mix just to blend. Add the parsley and serve at once. Serve at once over hot asparagus, broccoli and other vegetables. Can also be served as a 'classic' over eggs
