Sauce: Fresh Veggie Pasta Sauce

List of Ingredients
10 fresh tomatoes (to 12) chopped
2 carrots finely chopped
1/2 lrg onion diced
2 cloves garlic chopped (2 to 3)
1 cup zucchini chopped small
1 cup yellow squash chopped small
1 cup eggplant chopped small
black olives minced fine
fresh basil
fresh oregano
fresh parsley

Saute the vegetables in a pan coated with olive oil spray. Add the cut up tomatoes and cook down. Add a little red wine. Pour over hot pasta. (Original poster's notes: I just use a few sprigs of the herbs-probably more of the basil because it's the easiest to chop up, less of the oregano only because I hate fooling around with those tiny leaves!)
