    Seasoning: Curry Mixes

    List of Ingredients

    CURRY POWDER 1:
    1 teaspoon black peppercorns
    1 teaspoon mustard seeds
    1/2 teaspoon coriander seeds
    1/2 teaspoon cumin seeds
    1/2 teaspoon fennel seeds
    1/2 teaspoon cayenne pepper
    1 large bay leaf, broken
    8 whole cloves
    6 cardamom seeds, pods removed (6 to 12)

    CURRY POWDER 2:
    1 ounce cayenne
    2 ounces ground ginger
    8 ounces coriander seeds
    8 ounces turmeric
    2 ounces mustard seeds
    4 ounces fenugreek seeds
    4 ounces cinnamon stick

    Recipe

    In a spice-mill or blender, grind all the ingredients together until fine. If not using right away, store in an airtight container in the refrigerator.
