    Almond Cinnamon Clouds

    List of Ingredients

    4 large egg whites, room temperature
    1/4 teaspoon cream of tartar
    3/4 cup pourable Splenda
    1 tablespoon ground cinnnamon
    2 teaspoons vanilla extract
    1 teaspoon almond extract

    Recipe

    Preheat oven to 300 degrees. Line a cookie sheet with parchment paper or nonstick foil. In a medium bowl, combine egg whites and cream of tartar. Beat with electric mixer until soft peaks form. In a separate bowl, blend sweetener and cinnamon. Fold sweetner mixture and extracts into eggwhites.

    Drop by large spoonfuls (soup spoon size) onto prepared pan, about 1" apart. Bake for 20 minutes or until dry. To dry completely, turn oven off and leave cookies in oven for several hours or overnight. Store in an airtight container to retain crispness. Makes about 32 cookies, 2 servings.
