Chicken Broccoli Frittata

1 c. chopped fresh broccoli flowerets
1/2 c. chopped cooked chicken
1/4 c. chopped tomato
1/4 c. chopped onion
1/4 tsp. dried tarragon leaves
(1 T. low-calorie margarine)
1 c. egg substitute
Recipe
In 10-in nonstick skillet over medium heat, sauté the first 5 ingredients in margarine (or use broth or cooking spray) until broccoli is crisp-tender. Reduce heat to low.
Pour egg substitute evenly into skillet over chicken mixture. Cover; cook for 5-7 minutes or until cooked on the bottom and almost set on top. Slide onto serving platter; cut into wedges.
