    Chocolate Meringues

    4 egg whites, room temperature
    1 teaspoon vanilla extract
    1/8 teaspoon cream of tartar
    3/4 cup pourable splenda
    1 1/2 tablespoons unsweetened cocoa powder

    Recipe

    Preheat oven to 225¼F. Mix sweetener with cocoa and set aside.. In a metal bowl, beat together 4 egg whites, vanilla and cream of tartar until stiff peaks are formed. Add sweetener mixture and beat until blended. Drop by tablespoonfuls onto a cookie sheet covered with either wax paper or nonstick foil.

    Bake for 1 hour. If crisper meringues are desired, turn off oven after 1 hour and let meringues sit in closed oven another 30 minutes minimum. Peel off wax paper. If bottoms are not dry, return to oven for additional time. May be left in oven overnight to dry completely if desired. Makes 2 servings (each serving is a 2 oz. protein A portion.)
