Eggs Florentine a la Cumin

List of Ingredients
1 cup chopped spinach
1/4 cup red pepper, chopped
1 clove garlic, minced
pinch cumin
2 tablespoons no salt added chicken broth
1 whole egg
1 egg white Recipe
In a nonstick skillet over medium heat, saute spinach, red pepper, garlic and cumin in the broth. Lightly beat the egg and white together; pour eggs over spinach and pepper mixture. Reduce heat to low, cover, and cook until eggs are set.
