"I bring them to a boil for 1 minute then remove from the burner and allow to finish cooking and cool for 15 minutes. Then I displace the hot water with cold water and allow them to cool at least to room temp before even attempting to peel. To store in the fridge I just leave them in cool water the keep them peelable or just re-wet them before trying to peel and they'll be more likely to release better. I learned this from my grandmother and have never had a problem. Once peeled, eggs will keep fairly well in fridge if layed on wet kitchen paper in an air tight container"
