2 large egg whites
2/3 cup pourable splenda
1/2 teaspoon vanilla extract
1 teaspoon finely grated lemon zest
Recipe
Preheat oven to 200¼F. Line two baking sheets with baking parchment or nonstick foil andset aside. Beat egg whites in a small bowl at high electric mixer speed until frothy. With mixer still at high speed, add Splenda gradually and continue beating until meringue peaks stiffly, about 4 minutes. Beat in vanilla and lemon zest.
Drop by mounded teaspoon onto prepared baking sheets, spacing 2 inches apart. Set in oven and immediately turn oven off. Let cookies remain in oven for 2 hours or overnght. Peel off parchment and store in airtight container. Makes about 24 cookies, which is 1 serving of 2 oz. Protein A.
