Omelette Variations

I try to vary the veggies and spices that I mix in when I make omelettes several days a week. I think my favorites are
(1) 2 egg whites, rosemary & onion - simple, but the rosemary gives it a nice flavor. Then I eat a couple of strawberries or pineapple on the side.
(2) 1-2 egg whites, ~1 ounce of cooked ground turkey meat, Italian spices. My DH is on this plan with me and when I made this one he said it tasted like eggs and sausage. Again, fruit on the side.
(3) 3 egg whites, 1 cup spinach. This is a rapid results meal. I put the eggs and greens into my hand mixer, add a little rosemary, basil, oregano, whatever, onion, mix it all up and make an omelette out of it. I like this one because it had a better ÒconsistencyÓ because I have trouble with getting the egg whites to not be too runny and not burn! This one is ÒthickerÓ and behaves more like an omelette in the pan!
