    Peppermint Meringues

    warning: do not store these in a ziplock bag..otherwise they get squishy and marshmallow-like consistency

    List of Ingredients

    4 egg whites
    3/4 cup pourable splenda
    1 teaspoon vanilla extract
    1/4 teaspoon peppermint extract
    1/4 teaspoon cream of tartar

    Recipe

    Preheat oven to 250 degrees. Line baking trays with nonstick foil. Combine in a bowl the egg whites, extracts and cream of tartar. Beat until stiff peaks form. Pour in the Splenda and blend until well mixed. Drop by tablespoonfuls onto prepared cookie sheets (I made mine into 24 mounds). Bake for 35-40 minutes. This yields crispy outside and slightly chewy center.
