    Pickled Beet Eggs

    List of Ingredients

    2 cans sliced beets
    12 dozen hard boiled eggs (peeled)
    1 small onion sliced rings cut in half
    1/4 cup vinegar
    1/4 cup splenda (you can use more or less depending on how sweet you like them)
    1/4 teaspoon cinnimon

    Recipe

    Pour beet water into a pan, add the vinegar, splenda and cinnimon. Bring to a boil. Add the beet slices, eggs and onions. Boil for 3 or 4 minutes. Remove from heat. When cool, put into a lidded container and store in the fridge. These are ready to eat right away, but get better as they age. The cinnimon gives them a brownish cast instead of the staying beet reddish, so don't worry about them looking different.
