    Vegetable Omelet

    List of Ingredients

    2 egg whites (or egg sub. equivalent)
    1/2 cup mixture onions peppers and mushrooms
    1/2 cup spinach
    1/4 cup rice milk (this is not on plan)
    1/4 cup cooked rice

    Recipe

    Mix eggs and milk together. Layer rice, spinach, and vegetable mixture in a small baking dish. Pour egg mixture over top. Bake at 375 degrees for 20 minutes or until middle is set.
