    Saint's Southwestern Frittata

    3 cups potatoes, peeled and diced
    1 onion
    1 cup homemade or low sodium salsa
    12 egg whites
    2 tbsp water
    pepper to taste

    Heat a high quality large non-stick skillet (if you’re LL cooking spray is an option) Add potatoes and onion and fry until golden, about 15 minutes. Add the salsa. If you are using a tomato-based salsa, let it simmer for about 5 minutes to cook off any excess liquid. Remove from heat. Preheat oven to 400 degrees (maybe 375 if you have the good +++ oven) Pour potato/onion mixture into high quality non- stick baking dish and spread out. Mix egg whites with water and pour over potatoes. Bake until eggs are set and edges are golden, about 15 minutes. Cut into wedges and serve with additional salsa.

    Makes 6 Servings equals 2 oz Protein and ½ cup Carb. I have served this with Peas (my favorite veggie). It makes a very colorful dish.
