Blueberry Custard

List of Ingredients
1/2 cup of frozen blueberries
1/3 cup egg whites in a carton (equals 2 egg whites)
3-6 packets of splenda (to taste and satisfy sweet tooth)
a dash of vanilla extract and/or other extract (I like almond), optionalRecipe
Mix all ingredients together and microwave on high for 1-2 minutes. It will foam up and expand to about 5 times its size, so I usually put it in a BIG tupperware. Once it starts to heat up, take it out and stir and then put back in for 30 seconds. Repeat stir and 30 second heat process 2-3 more times. When you take it out of the microwave, it will be poofy (almost like a souffle), but when you stir it, it will go back to a liquid form. It is done when it is fully cooked and thickened just a bit.
This is good either warm or chilled. It reminds me of a pudding. Very delicious!
**Hint, if you want to use it as a pre-workout meal, use half the ingredients and use it as a filling for egg white crepes or pancakes.
