Fresh Peach Salsa

List of Ingredients
3 1/2 cups diced peeled peaches (2-1/2 pounds)
1/4 cup diced red onion
2 tablespoons finely chopped fresh cilantro
1 tablespoon minced seeded jalape�o pepper
2 tablespoons rice vinegar
1 teaspoon lemon juice
1 clove garlic mincedRecipe
Combine all ingredients in a bowl, and stir well. Cover and chill. Yield: 3-1/2 cups
