Cranberry-Apple Crisp

Note: For oat flour, blend uncooked raw oats in blender until consistency of flour -- measurement is after blending.
List of Ingredients
* 1 cup old fashioned oats
* 1/2 cup oat flour
* 2 tbsp Stevia powder
* 1 cup unsweetened applesauce
* 24 oz cranberries
* 3 med Golden Delicious or Fuji apples, peeled, cored, cut into 1/2 inch cubes
* 2 tbsp Stevia powder
* 2 tbsp apple juice or cider
Recipe
Topping: combine oats, oat flour, and 2 tbsp Stevia powder in a large bowl; toss to blend. Add 1 cup applesauce and mix until mixture comes together in moist clumps. Cover; chill while preparing filling. Topping can be prepared 1 day ahead; keep chilled.
Preheat oven to 375 degrees. Generously spray 13 x 9 x 2 inch glass baking dish with nonstick spray**. Filling: combine cranberries, apples, Stevia powder and apple juice in a large, heavy pot. Bring to a boil over medium heat, stirring often. Boil until cranberries are tender and juices thicken slightly, about 5 minutes. Transfer filling to prepared dish. Sprinkle topping all over. Bake crisp until filling bubbles thickly and topping is crisp and deep golden brown, about 40 minutes. Let cool 10 minutes before serving.
