Minted Peach Chutney

List of Ingredients
2-1/2 lbs. peaches, peeled, pitted, chopped
1/2 cup chopped red or green pepper
2 Tbsp finely chopped onion
2 cloves garlic, minced
1 Tbsp minced fresh (or 1 tsp dried) mint leaves
1/3 to 1/2 cup NutraSweet Spoonful (or use splenda)
Recipe
Heat all ingredients (except NutraSweet Spoonful) to boiling in large saucepan; reduce heat to low and simmer, uncovered, until mixture is thickened, about 30 minutes. Cool; stir in NutraSweet Spoonful. Serve chutney with grilled or broiled lamb, pork and chicken. (Makes 2 cups.)
