Plum Mint Salsa

1 1/4 lb ripe plums quartered and pitted
1 sm red onion quartered
1 cup fresh cilantro
3/4 cup fresh mint
1 tbl white wine vinegar
(original recipe calls for 1/2 tsp salt)
1/4 tsp pepper
1/8 tsp red pepperRecipe
Place plums and onion in a food processor; pulse 10 times, scraping sides of bowl occasionally. Add cilantro and remaining ingredients; pulse five times or until mixture is chopped. Do not over process mixture or salsa will become mushy. Six 1/2 cup servings.
