Strawberry Shortcakes/Crepes

Merengues: (aka. Shortcakes)
8 egg whites
4 packages sweetener
pinch of cream of tartarRecipe
Add the cream of tartar and sweetener to the egg whites and whip up until really stiff. The longer you beat them, the better- I think, anyways. I spoon these up into 8 equal sized mounds (one for each egg), and put in the oven at low temp for about an hour- one and a half hours. They puff up a bit. If you save them, though, they fall back down (the ones in the pic. have already fallen). You can cook them longer if you want crispy merengues. I like them creamy for this recipe, though (like in lemon merengue pie).
For the sauce- take your portion of strawberries and mix in the blender and pour over the merengues. You can add a little sweetener to it if you need it. (I usually only do if I make a big batch of strawberry sauce and add 1 package to the whole thing- I don't have much of a sweet tooth, though).
Try it- trust me, it makes a great breakfast.
Ok,,I use this recipe also but,,I make crepes,,All you have to do is beat your egg whites to mix together..but,,not over mix ..pour in a small NON STICK pan,,and let them cook...flip over cook other side,,and then add your strawberry mixture and ROLL...ITS a change from just regular egg whites..
