    Beans: Beans in Wine

    adapted from Bean Feast by Valerie Turvey

    List of Ingredients

    1 1/2 cups red beans soaked overnight (for plan friendly, use pinto beans)
    sauteeing liquid
    2 cloves garlic chopped
    1 red pepper sliced
    1 cup red wine
    1 tbsp tomato paste (no salt added)
    1 bay leaf
    pepper to taste

    Recipe

    Cook beans in unsalted water until just tender. Drain. Preheat oven to 350�F. Saute onion, garlic and pepper until soft. Add beans, wine, tomato paste, and bay leaf; season with pepper. Transfer to casserole and bake 45 minutes.
