Beans: Tex-Mex Pinto Beans

List of Ingredients
1/2 cup water
1 medium onion, diced
1 stalk celery, diced
(original recipe calls for kernels from 1 ear of corn, which is not on plan)
15 ounces pinto beans, rinsed & drained
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon ground cumin
hot pepper sauce or cayenne pepper
1 tablespoon chopped fresh cilantro (optional)
Recipe
In a large nonstick skillet, bring the water to a boil over medium high heat. Add the onions and celery. Cover and cook for 5 minutes. (Add the corn and cook for 2 minutes). Drain and return the veggies to the skillet. Add the beans, garlic, oregano and cumin. Cook over medium heat, stirring occasionally, for 5 minutes, or until the beans are hot. Season to taste with the hot pepper sauce or cayenne pepper. Sprinkle with the cilantro if using.
