Desserts: Banana Rice Pudding

2 to 4 ripe bananas, sliced
2 cups cooked brown rice or barley
2 tablespoons brown sugar (to make more plan friendly, recommend substituting splenda )
1/4 teaspoon vanilla
1/4 teaspoon dessert spice blend or cinnamon
Recipe
*note: the bananas in this recipe count as carbs. combine all ingredientsin microwavable dish and microwave on high for 3-4 minutes or until the bananas are soft and the grains are heated through. Stir and serve. Portion out into 1/2 cup servings.
