2 egg whites
1 T unsweetened cocoa
1 T vanilla
1/4 cup Splenda
1/4 cup oatmeal flour
Recipe
Beat egg whites til they are white and a little stiff. Add cocoa powder, splenda and vanilla. Blend. Then add flour. Beat until well blended. Bake in a 4x4 corningware dish for 15 minutes at 350 degrees.
I make mine at one time for 4 servings. Bake in an 8 inch square pan. Cut into 4 servings. Put all on a plate. Wrap with Suran Wrap. Refrigerate.
Remember: 1/4 cup oat flour = 1/2 cup oats uncooked, which equals 1 cup of cooked oatmeal.
When you put 1/2 cup oatmeal in a blender and grind it up, it comes down to 1/4 cup of oat flour.
