    Desserts: Gingersnaps

    Recipe Introduction

    note: recommended for living lean rather than for weight reduction phase due to some off plan ingredients, such as the processed oat flour, splenda and brown sugar twin.

    List of Ingredients

    2 cups Oat flour
    1/4 C non sweetened applesauce
    1/2 cup granular Splenda
    2 Tablespoons Brown Sugar Twin
    2 teaspoons water
    1 teaspoon sugar free vanilla extract
    1 1/2 teaspoon ground ginger
    1 teaspoon cinnamon
    1/4 teaspoon nutmeg
    1/4 teaspoon ground cloves
    1/2 teaspoon salt

    Recipe

    Preheat oven to 300�F. Mix applesauce with Splenda and Brown Sugar Twin in a large bowl. Add water and spices and mix well. Gradually add oat flour and mix to a stiff dough. Form into small balls and place on greased cookie sheet at least 1" apart.

    Bake at 300�F for 20 minutes. After five minutes in oven, press cookies down with a fork in a criss-cross manner (not necessary. If you don�t press them they will come out looking like the ones you buy in the box). Continue baking, being careful not to burn and adjusting time for your oven. Makes 20-24 cookies.


    Molasses substitute: (makes 1 cup worth)
    3/4 of sugar Plus 2 teaspoons baking powder (increase liquid called for in recipe by 5 tablespoons and decrease baking soda by 1/2 teaspoon)
    OR * 3/4 cup sugar plus 1 1/4 teaspoons cream of tartar (increase liquid called for in recipe by 5 tablespoons)
