Desserts: Minty Leprechaun Cookies

2 egg whites (at room temperature)
2 drops green food color
1/2 tsp vanilla extract
1/8 tsp mint extract
sugar substitute equivalent to 1/3 cup sugarRecipe
1. preheat oven to 325 F.
2. Beat the egg whites, food color, and vanilla and mint extracts with an electric mixer until soft forms peak. Gradually beat in the sugar substitute; beat until stiff peaks form.
3. Drop by tablespoonfuls onto a nonstick baking sheet.
4. Bake for 10 minutes. Turn off the oven but leave the cookies in the oven until cool.
