Recipe Introduction
"Ok, I modified the cookie recipe and stored them in a brown paper bag (lunch bag). Today they're crunchy! Hooray!! The other recipe was like rubber. Here's the recipe if you want to try it. If you make 12 then you can have 3 for your serving (protein/carb - AFTERNOON SNACK). If you make less divide the # by 4 days and that will be your serving. If you think of something that would improve the taste let me know. I actually like them this time. "
List of Ingredients
2 cups oatmeal, uncooked
1/2 tsp. cocoa
1 tsp vanilla extract
1 tsp coconut extract
8 egg whites
Recipe
First, beat the egg whites until they are fluffy. Add the cocoa, vanilla, and coconut. Add the oatmeal last. Bake at 300 degrees for 10 minutes. My Mom suggested they might come out better if I fold the egg whites in last. However, I haven't tried that yet. Let me know what you think.
