    From member Sharkey74: This was modified from a recipe found at www.recipesource.com. See my notes at the bottom of this recipe. Buny's note: this may be best used during living lean rather than weight reduction phase, sinice it contains some off plan ingredients, like the rice milk, the amount of splenda, and the oatmeal flour; if used during weight reduction this may significantly stall weight loss efforts.

    List of Ingredients

    * 3 cups oatmeal flour
    * 1 cup rice milk**
    * 2 tbsp Splenda
    * 1/4 cup water
    * 3 cups frozen peaches
    * 2/3 cup Splenda
    * 1 tbsp oatmeal
    * 1 tsp cinnamon
    * 1/2 tsp nutmeg
    * 1/2 tsp cinnamon
    * 2 tbsp butter** **

    Recipe

    Preheat oven to 425 degrees. Mix water, peaches, 2/3 cup Splenda, and 1 tbsp oatmeal in a saucepan; place over medium heat and allow to boil. Put hot fruit in a casserole dish that has been sprayed with non-stick cooking spray** . Sprinkle with 1 tsp cinnamon and nutmeg. Dot with 1 tbsp butter** .

    Mix oatmeal flour, rice milk, and 2 tbsp Splenda in a separate bowl. Form into a ball. Roll out dough. Cover filling with dough. Dot dough with 1 tbsp butter** and sprinkle with 1/2 tsp cinnamon. Bake 20-30 minutes or until top is browned and filling is heated through. Cover topping with foil if necessary to prevent over-browning.

    Notes:
    Because the oatmeal topping mixture was a different texture than what regular flour would be, it wasn't easy to cover the filling. I mixed the filling mix with the topping, then baked it at 375 degrees for 25 minutes. It baked up a bit more than I wanted it to, so I would recommend 5 minutes less baking time or maybe reducing the oven temperature a bit.
