From member DonnaM: This was an experiment that came out pretty well so I'm going to share it. It utilizes your protein and carb. Hope you enjoy. The rice paper is edible. Each muffin equals 1 oz protein and 1/2 cup carbohydrate.
List of Ingredients
* 1-1/2 cups baked, mashed sweet potato
* 3 egg whites
* cinnamon to taste
* allspice to taste
* cloves to taste
* nutmeg to taste
* 3 pkts Splenda
* 3 circles of rice paper, cut large enough to fit in muffin cupRecipe
Combine mashed sweet potato, egg whites, and spices. Beat until smooth. Add Splenda, beat again to mix. Cut 3 circles of rice paper large enough to fit in muffin cups. Moisten rice paper slightly (one at a time) and place inside a non-stick muffin pan cup. Pour 1/3 of the "batter" into each of the rice paper-lined muffin cups. Bake at 350 degrees until nicely browned on top. This recipe makes 3 "muffins".
