From member shannalee724: If you are as bored with egg whites as I am, try this. It sure helps squelch the sweet tooth and gets that protein in all at the same time.
List of Ingredients
2 egg whites
1 tbsp cocoa powder (add more if you desire more chocolate) -- this is off plan ingredient
1/3 cup Splenda (add a little less if you want more dark chocolate taste)
1 tsp vanillaRecipe
With all ingredients in a bowl use counter top or hand held mixer to beat on high for one minute. (Mixture will have the consistency of cake batter.) Pour into dessert cup and refrigerate for at least and hour. Serve.
Variations:
*Fruit can be added if it is part of your breakfast or snack
*For a more mousse like texture, beat egg whites until stiff, then add other ingredients and beat until mixed.
*Spoon mixture into a kid's popsicle maker (the little popsicle shaped plastic containers) add a stick, freeze and serve as a pudding pop.
