    List of Ingredients




    20 limes
    2 1/2 cups boiling water
    sugar substitute equivalent to 1 cup sugar
    1 small bunch of mint
    one 750-ml bottle of sparkling water

    Recipe



    Roll the limes on a cutting board, bearing down with the pal of your hand. Cut them in half and squeeze out the juice; there should be approximatley one cup. Place the halves in a non-reactive bowl. Poor the water over the lime halves. Steep for no more than 10 minutes. Strain water and poor into lime juice. Stir in sugar substitute.

    Crush mint leaves in fingers and stir into juice. allow mint to steep for at least 30 minutes. Strain the juice and serve with half of the sparkling water. Poor over ice. serve with a mint sprig.
