4 large bulbs garlic, unpeeled
(be sure to use BULBS, not individual cloves) Recipe
Preheat the oven to 350�F. Cut the tops from the garlic bulbs to expose just the tips of the garlic cloves. Place the bulbs in the center of a large piece of foil. Mist with nonstick spray. Seal the foil tightly, leaving some air space around the garlic. Bake for 55-60 minutes or until the garlic is tender.
Open the foil and set aside to cool slightly. One clove at a time, squeeze the roasted garlic out of its skin. Discard the foil and skins. Puree the garlic in a blender or food processor, adding 1 tsp water if needed, to facilitate blending. Refrigerate up to 1 week.
Alternately, break the bulbs into individual cloves and peel them. Mist with nonstick spray and wrap in foil, as in the recipe. Bake at 350�F for 40 minutes, or until the garlic is tender.
