    4 large bulbs garlic, unpeeled
    (be sure to use BULBS, not individual cloves)

    Preheat the oven to 350ºF. Cut the tops from the garlic bulbs to expose just the tips of the garlic cloves. Place the bulbs in the center of a large piece of foil. Mist with nonstick spray. Seal the foil tightly, leaving some air space around the garlic. Bake for 55-60 minutes or until the garlic is tender.
    Open the foil and set aside to cool slightly. One clove at a time, squeeze the roasted garlic out of its skin. Discard the foil and skins. Puree the garlic in a blender or food processor, adding 1 tsp water if needed, to facilitate blending. Refrigerate up to 1 week.

    Alternately, break the bulbs into individual cloves and peel them. Mist with nonstick spray and wrap in foil, as in the recipe. Bake at 350ºF for 40 minutes, or until the garlic is tender.
