    Tofu: Baked Eggplant Tofu Roll-ups

    List of Ingredients




    * 1 eggplant, sliced lengthwise
    * 5 oz tofu, pressed to release moisture
    * frozen spinach (not quite a whole package), defrosted and squeezed
    * garlic and Italian seasonings
    * 1 can low sodium stewed tomatoes, squeezed and seasoned with Italian seasonings

    Press eggplant between paper towels and cutting board with something heavy on top to release moisture for approximately 20 minutes. Then broil or grill and set aside. Combine tofu, spinach, garlic and Italian seasonings in mini chopper or food processor. Once eggplant are cool to touch, put a dollop of tofu mixture on each and roll up. Place in a baking dish which has a little of tomato mixture on bottom. Top with remaining tomato mixture. Bake at 350 degrees for approximately 20 minutes or until soft (you can smell them).
