    2 cups oat flour (made by blending in blender from 2 cups oatmeal).
    1/2 cup Splenda
    1 Tablespoon poppyseeds (originally called for 2, I reduced)
    12 egg whites
    1/2 cup unsweetened applesauce
    Zest of one lemon (I grate a lemon rind)

    I whip the egg whites a little, then add applesauce and lemon zest. I mix all the dry ingredients in a separate bowl then using a fork mix the two together. I spray the non-stick 12-muffin pan with butter flavored Pam and divide it evenly into 12 servings. I then sprinkle a little splenda (about 3-4 packets) over the top and bake in oven for 20 minutes at 400 degrees. It is the "new improved" bread. If you cook them a little longer than 20 minutes they brown more.

    I am a plan B person and these are completely legal. Two muffins is a serving (gets 2 egg whites and 1/3 cup oatmeal). I don't count the applesauce cause 1/2 cup divided 6 ways isn't much.

    Try these. They are very good, very portable.
