Blueberry Oat Muffins

List of Ingredients
1/4 Cup raw Oatmeal (ground into flour in my food processor)
1/4 tsp Baking Powder
2 Egg Whites
1/2 - 1 TBSP Splenda (depends on your taste I use 1/2)
1/4 or 1/2 Cup Blueberries (or A/B Fruit if you're allowed -- the muffins are okay without fruit ok to substitute pineapple, banana, etc. Can also put in shredded zucchini)
Recipe
Mix all the ingredients together, add a splash of water if necessary. Bake at 350 for 10-12 minutes. You may need to cook the muffins an extra minute or two if you add the fruit.
You have protein, carb, and fruit (if used) all in an easy to pack and go meal.
