    Oat Muffins

    List of Ingredients

    1 cup uncooked 1-minute oats
    1 tsp cinnamon
    1 tsp baking powder
    1/2 tsp vanilla
    1/2 tsp maple flavoring
    8 pkts Splenda (8 to 10)
    6 egg whites

    Recipe

    Mix all ingredients (you may have to add a little more oats to make batter stiff). Divide equally into 3 large size muffin tins. Bake at 350 degrees for 25 minutes.

    Optional: Add 1/4 cup frozen blueberries before baking.

    Notes from member Schmooz: This is my daily treat for morning snack with my coffee. This recipe doubles easily to make 6 muffins and they freeze great!
