    Oatmeal Pumpkin Muffins

    List of Ingredients

    1/2 cup ground oats
    1/4 cup canned pumpkin
    8 egg whites
    2 tsp pumpkin pie spice
    1 1/2 tbsp Splenda
    1/2 tsp baking powder (try to find sodium free)
    1 dash vanilla extract

    Recipe

    Mix all ingredients well. Distribute evenly into 4 muffin cups. Bake at 350 degrees for approximately 20-25 minutes

    Notes from member muchieaz: This makes 4 large muffins, each having 2 oz of protein and 1/2 cup of carb (the pumpkin counts as part of the carb).
