Precardio Applesauce Muffins

1/2 c. oatmeal flour
1/2c unsweetened applesauce
2 egg whites
1/2 c. blueberries
1 tsp cinnamon
1 tsp. Splenda (optional)
Recipe
Preheat oven to 350. Whip eggwhites into soft peaks. ÊIn a separate bowl, combine oatmeal flour, applesauce, cinnamon & Splenda. ÊGently fold eggwhites into oatmeal mixture. Add blueberries. ÊSpoon into a non-stick muffin tin - makes 3 muffins.
Bake at 350 for 25 minutes. ÊLet cool in tin for 5 minutes or so, and cool the rest of the way on a baking rack.
This version equals 1c carb, 1c fruit, 2oz protein (for all 3 muffins). ÊIt also omits baking powder which usually contains salt.
