Butternut Banana Muffins

1 1/2 c. old fashioned oats
6 egg whites
1/2 TBS vanilla
1/2 TBS butter nut ( or just butter) extract
1 TBS sodium free baking powder
1/4 c (heaping) Splenda (or Equal)
3 ripe bananasRecipe
preheat oven to 325
Blend oats in food processor or blenda until they are the consistancy of flour and pourinto mixing bowl. Add egg whites, extracts, baking powder, Splenda, and mix well by hand.
Peel banans and put in food processor or blends and puree. Add to bowl and blend well by hand
Divide batter into 24 mini muffins. Use a good nonstick pan or you will need a spray of Pam (not OP) Batter shoud come to the top of muffin tin. Bake 16-18 min. until lightly browned. Cool completely and store in plastc bags.

original poster's suggestions:
ok to use 1 banana along with 1/2 c. unsweetened aple sauce, 2 tsp cinnamon and banana extract. Also recommend omit all banana, and add blueberries with extra sweetner. They baked theirs in regular muffin tin and maked at 350 deg. for 25 min.
