Lemon/Almond Poppy Seed Muffins

2c Oatmeal flour
1/2 c plus 2tsp. Splenda
2T poppy seeds
2tsp baking powder
12 egg whites
4 tsp. freshly gradted lemon zest or 1tsp of almond extract
1/2 c. of unsweetened applesauceRecipe
Heat oven to 400 degrees. Coat a 12cup muffin , if needed w/ / Pam or Joy.
In a large bowl, combine flour, 1/2c of sugar, poppy seeds, baking powder. In a seperate bowl, whisk together eggs, applesauce & lemon zest/almond extract. Add to flour mixture & stir til dry ingredients are just moistened. Pour batter into muffin tin. Sprinkle w/ remaining 2tsp sugar & bake for 18min. or til toohpick inserted in center comes out clean. Remove muffins from pan & let cool on a wire rack. Receipe should make 12 muffins. These muffins freeze well.
2 muffins are approximately = to 2 egg whites & 1/3 cup of oatmeal.
(original poster's notes: ....I cut the recipe in 1/2 to try it lst. I did not put any Splenda on top of the muffins BUT I would increase the Splenda at least 2/3c - 1/2c ( depending on u’r swt. tooth). And I only used 4 egg whites instead of 6. And I made the almond poppy seed. They came out great. But I would recommend if you are putting them on bottom of rack to bake in oven, you may want to cook them less time. I did the whole 18min. & they were a little dry. )
