    Julie's Gingerbread Muffins

    List of Ingredients

    2 ¼ cups egg whites
    1½ cups ground oats
    ¾ cup canned pumpkin
    4 ½ Tablespoons Splenda
    1 ½ Teaspoons baking powder **
    1 Teaspoon ground ginger
    1/4 Teaspoon ground cinnamon
    1/8 Teaspoon freshly grated nutmeg
    a pinch of ground cloves
    ½ Teaspoon zest of an orange
    1 Teaspoon vanilla extract

    Recipe

    Beat egg whites until frothy. Measure the oats into the blender, then grind. Slowly add to egg whites. Mix in pumpkin, blend. Add remaining ingredients. Distribute into 12 muffin cups. Bake at 350 degrees for approximately 20 to 25 minutes.
