    Single Serving Muffins

    List of Ingredients

    1/4 Cup Oatmeal (ground into flour in my food processor)
    1/4 tsp Baking Powder
    2 Egg Whites
    1/2 - 1 TBSP Splenda (depends on your taste I use 1/2)
    1/4 or 1/2 Cup Blueberries or 1/2 smashed ripe banana (optional)
    sprinkle of cinnamon

    Recipe

    Mix all the ingredients together, add a splash of water if necessary. Bake at 350 for 10-15 minutes. You may need to cook the muffins an extra minute or two if you add the fruit.

    Also try butter extract and vanilla extract. You have protein, carb, and fruit (if used) all in an easy to pack and go meal
