    Zucchini Muffins

    Recipe Introduction

    "Make these with out the sweetener or vanilla. Add some Mrs. Dash and you have ’bread’. I bake them in 3 mini loaf pans and eat half a loaf for one snack. I have also been known to add 0.4 oz of protein in the form of turkey slices (no-sodium) and made a sandwich. If you like you can make a vegetarian sandwich with free tomatoes and cucumbers."

    List of Ingredients

    2.5 Cups Oatmeal (ground into coarse flour in blender or food processor)
    1 tsp. Baking Powder
    10 Egg Whites
    1 tsp. Vanilla
    1 taps Cinnamon
    1/2 Cup Grated carrots
    1 Cup Grated Zucchini
    To taste.Brown Sugar Twin or Splenda

    Recipe

    Mix all the ingredients together, add a splash of water if necessary.
    Pour into paper muffin cups in a muffin pan. (no need for cooking spray)
    Bake at 350 for 20 minutes or until firm in the center.

    Makes 12 -- 2 of these make a complete meal
    You have protein, carb, and veggies all in an easy to pack and go meal.

    Mini Loaf Pans: 3 pans Cook at 350 for 30 min
    Mini Muffins: 36 muffins at 350 for 10-12 min
