New & Improved Outrageous Oatmeal Muffin

"This recipe originally came from the recipe forum then was improved by member ejt and then I took her recipe and made a few more tweaks...so here they are :"
List of Ingredients
12 egg whites, slightly beaten
2 cups dry oatmeal
1/2 cup unsweetened applesauce
1/2 tsp baking powder
1 tsp vanilla
2 tsp cinnamon
¼ cup Splenda
¼ cup Cocoa Powder (optional)
1tsp Coconut Extract (or other flavoring) - OPTIONALRecipe
Slightly beat egg whites then add in and mix applesauce and other wet ingredients. In another bowl mix dry ingredients. Add dry to wet ingredients and mix well. Portion batter to make 12 regular muffins. Bake at 375° approximately 14 minutes or until golden brown on top.
2 muffins are approximately equal to two egg whites and 1/3 C oatmeal. Must be refrigerated or frozen.
Cheri's Note: Do not use muffin papers or they will stick and you will never get them out of the paper. – Best advice, buy a Silicone muffin pan (about $10 - $15) and when the muffins come out of the oven put the pans on a wire rack to cool slightly then pop them in the freezer (still in the pan) until frozen…then remove. If done this way they WILL NOT stick.
