Oat Bread/Muffins

1 3/4 c. quick oats (uncooked)
1/4 c. Old fashion oats
2 t. cinnamon
1/2 t. nutmeg
1/2 t. ground cloves
2 t. baking powder
1 t. vanilla
1 t. imitation butter extract
1/4 c. Splenda (or to taste)
12 egg whites Recipe
Mix all ingredients (you may need to add more oats to stiffen the batter). Line a loaf pan with reynolds release foil. Pour batter into loaf pan and bake at 350 for 25min or until knife comes out clean.
Makes 6 servings, but they are big! After cooling store in a ziploc baggie in the fridge. Makes a GREAT afternoon snack with a few raw carrots.
VARIATION: This week I grated 1 small zucchini and added it to the batter. It was pretty good. I also tried it with carrots, but didnt like it that much.
dwhit - Duck Hall - Suggests:
I make the oatmeal muffins a lot. I grind my oatmeal into flour or buy oatmeal flour and use 1/2 cup applesauce instead of butter extract, but other than that it is like yours. I sometimes add frozen blueberries, or leave out some of the spices and add cocoa powder to make chocolate. You can also add lemon juice and poppy seeds. I think it is a good carb before a workout too.
