Oatmeal Cinnamon Muffins

I mix:
8 egg whites, (that I sort of foam up with a fork)
1 tsp. vanilla
1 cup quick oats
1/2 cup splenda
1 1/2 tsp cinnamon
1 1/2 tsp baking powderRecipe
Preheat oven to 350 degrees.
Mix dry ingredients. Foam egg whites. Pour in dry ingredients. whip with fork.
Pour into muffin tins (I separate into 8 tins) this equates to 1 egg white and 1/8 cup dry oatmeal. The math says that if you eat 2 muffins you will get 2 oz. protein and 1/4 cup dry ( 1/2 cup intended) carb. This is a snack for a C.
Bake for 20 minutes. Freeze in baggies (two per baggie)
I had been mixing two batches of the oatmeal muffins to have 16 for Monday thru Thursday. Well, this morning I mixed all 16 egg whites and doubled all the other ingredients. I added 2 tsp of vanilla to the mix. When I mixed the egg whites, I put them in my kitchen aid mixer bowl and let the whisk take them to a soft white foam. then I put all of my dry ingredients, mixed it all together and then at the very last added my two tsp. of vanila and mixed well. It sure was a lot easier than mixing two separate batches.
Well, they are out of the oven cooling and they sure look nice! Just wanted to share the adjustment in the recipe.
