    Apple Pork Curry

    List of Ingredients




    2 lb lean pork, cut into, 1/2" Cubes
    1 apple, peeled and chopped
    1 small onion, chopped
    1 clove garlic, crushed
    1 tsp concentrated chicken broth
    1 Tbsp curry powder
    1/8 tsp cinnamon
    2 tsp ground ginger
    (original recipe called for 1/2 tsp salt)
    1/2 cup orange juice

    In slowcooker, combine the above ingredients. Cover and cook on low 5 or 6 hours or until pork is tender. (I have had to let this cook as long as 11 hours before - still turns out great...) Turn pot on high. In a measuring cup, combine 2 Tbsp cornstarch and 2 Tbsp cold water. Stir into pork mixture. Cover and cook until thick. Serve over rice
