    Filet of Pork w/ Star Anise

    List of Ingredients




    4 oz small shallots, peeled but left whole
    2 tbsp oil (use low sodium chicken broth instead)
    1 clove garlic, peeled
    2 star anise
    1 lb pork fillet, cut into thin strips
    2 stalks celery, diagonally sliced
    1 tspn green peppercorns, drained
    6 fl oz chicken stock
    2 tspn cornstarch dissolved in 1 tbsp cold water (or arrow root)
    1 tbsp rice wine or pale dry sherry

    Put shallots in a small saucepan with water to cover. Bring to the boil, turn off heat and leave to stand for 5 minutes. Drain and pat dry with paper towels.

    Preheat wok, then add oil. Heat gently, then add garlic and star anise and stir fry for minute. Discard garlic and star anise.

    Raise heat, add pork to wok and stir fry over high heat for 3 - 4 minutes. Transfer pork to a bowl and set aside.

    Add shallots and celery to wok and stir fry for 2 minutes. Return pork to wok and add green peppercorns, stock, cornstarch mixture and rice wine or sherry. Bring to the boil and cook, stirring, until thickened.
